From grinding masalas to assembling vibrant platters of Samay Baji, each step reveals the stories and rituals woven into everyday Newari life. The experience concludes with a shared lunch — a warm, communal meal that celebrates the flavors of Bhaktapur, as well as the spirit of togetherness that defines Newari hospitality.

What to Expect:
  1. Introduction to Newari Cuisine: Learn about the history and cultural significance of Newari cuisine and key ingredients used in Newari cooking, such as beaten rice (baji), black lentils, buffalo meat, and local spices.
  2. Cooking Demonstration: A Professional Chef or local cook leads the session.
  3. A few traditional dishes are focused on:
    Yomari: A steamed dumpling filled with sweet molasses and sesame seeds.
    Chatamari: Often referred to as 'Newari pizza', it's a rice flour crepe topped with minced meat, egg, and spices.
    Momo: Nepali-style dumplings filled with meat or vegetables.
    Bara: Savoury lentil pancakes.
    Chhoyela: Spiced grilled meat, typically buffalo or chicken.
    Aalu Sandheko: Spicy potato salad.
  4. Hands-On Cooking: Guests are divided into small groups for a more personalised experience and guided through the preparation and cooking processes.
  5. Tasting and Dining: Enjoy the prepared dishes together in a communal setting.
